Sustainability is very much a global trend, but nowhere is it more prominent than at Huerta, a veritable “farm-to-table” bar in the heart of Bogotá. With a garden boasting more than 100 species of plants and herbs, ingredients are hand-picked every afternoon by the bartenders who then work their mixologist magic to blend them into cocktails for the evening. No two menus are the same, and are curated in accordance with what is available from the garden. Sustainability at its finest.
